Jason Restivo has been a certified sommelier since 2008. “Most people attribute it to wine, but I attribute it to the attention to detail,” he says. “We have a wine program that moves on a regular basis that will keep our staff on their toes. It’s not about turning people into sommeliers; it’s just about making sure they feel confident to engage with the guests.”
